"IL SOGNO" Located at the highest point of the sinuous hill that hosts it, Il Sogno is the heart of the estate "Il Diamante della Val d'Orcia". The building, adjacent to the stables, houses on the first floor 4 double bedrooms, each with en suite bathroom, and two independent flats (2 bedrooms with bathroom + living room and kitchen), all with air conditioning. On the ground floor, instead, there is the following: - The Hotel Reception (entrance); - The Restaurant (multi-purpose room), with its local cuisine made from excellent raw materials from its own organic farm, which seats up to 50 people and is equipped with a large fireplace, an equipped counter and a professional kitchen (electric hotplates, kettle, fryer, professional ventilated oven, counter-top refrigerators, column refrigerators, heated table for handling dishes); - The service area (air-conditioned warehouse, bottling area, line preparation laboratory, column refrigerators, blast chiller, oven, planetary mixer, stainless steel tables and cabinets) - The warehouse with total predisposition for the construction of an oil mill (drainage pipes, connections, adequate current, for insurcing project of the company area connected to oil production) - The laundry and bathrooms for guests and staff; - The showroom, relaxation area and tasting area used for selling the farm's products. Regarding the agricultural business, it is a BIO-certified farm created with the aim of producing unique products of superior quality with complete respect for the environment. The core business is currently oil production: every year, the monocultivar (between leccino and pendolino) dedicated to the top product (200 l) is chosen, and the remainder of the bland mixture production (1,300 l) is divided into 6 variants of flavoured oils. In this respect, 4.4 hectares of land are related to olive groves in full production, with 1,500 25-year-old trees; 13.7 hectares are related to growing olive groves with about 5,000 5-year-old trees.
