Nestling on the top floor of the Hôtel de Paris inaugurated last summer in Saint-Tropez, “The Roof” proposes inventive cuisine signed by the Niçois duo from Les Deux Canailles, Tsumoru Takano and Laurent Inoué. With a delicate Japanese influence, each dish is discovered in a new light. The carpaccio of sea-bass, for example, is mixed with yuzu, the Riviera vegetable salad is seasoned with soya-flavoured sesame oil, and the lobster and fillets of red-mullet are deglazed with saké !
