Like an oasis irrigated by Le Verdon, Le Relais Notre Dame in Quinson in the Alpes de Haute Provence occupies a former post-house and inn transformed into an hotel-restaurant. In love with France since her childhood, Korean chef Naraé Kim, backed by her first French experience with the Yannick Alléno group, has just been appointed Pastry Chef at the Park Hyatt Paris-Vendôme. On the 7th floor of Le Radisson Blu, the new Vertigo restaurant is characterized by its spaciousness and lovely view of the Bay of Cannes. Designed by Marc le Studio MHNA, the decor is inspired by the yachting world. In decor with a tropical ambiance, a real invitation to travel, Bomba proposes a one-way ticket to Latin America. Manning the ovens, the young French-Colombian chef Guillermo Donozo, with experience at Ducasse’s Les Ombres and elsewhere, offers a crossbred menu serving dishes but also tapas : “ceviche” of raw seabream, Argentine sirloin steak, pastry “empanadas”... Heading up this new gourmet den, the young French-Israeli chef Daniel Renaudie has composed a short, simple menu on which beef takes the starring role. And not just any old beef. Ethical beef. The first restaurant in Paris to join a group of breeders committed to the respect of animal well-being, Le Beef treats its guests to matured rib of beef, sirloin steak and tenderloin, offering perfect taste, cooked as you please, with original sauces all made on the premises. Proposing seven comforting recipes, Naked proves that one can really lick one’s lips when offered burgers solely made of green ingredients ! Dripping with cheese, ultra-crunchy, these little gems are devoured with French fries made of potatoes or sweet potatoes slathered in melted Cheddar. As for decor, this foodies’ hot spot sends a Californian breeze wafting within its walls with a backcloth of palm trees, pastel colours, giant plants, and its super, summery soundtrack. Smart ! After bringing back to life the South American institution Anahi in Le Marais, installing his cosmopolitan Beefbar near the Champs Elysées, Italian-British serial restaurateur Riccardo Giraudi is again shaking up Paris ! This time in street food style with the Pinsa Romana, today’s most stylish pizza, presenting the cream of the crop on its fancy oval pastry : grilled vegetables, “pancetta”, ricotta with truffles, fine ham... Chef and restaurant-owner Philippe Baranes (Braisenville and Il Cuoco Galante) has grown his culinary territory with Amaro, his first food & cocktail bar. His credo : to prioritize bitters culturally acclaimed by Italians. And from Italy to Paris, there’s just one step ! The menu at Amaro thus offers a finely tuned choice of “amari” : Montenegro, vermouths, bitters, serving as the basis for 10 tasty cocktails perfected by mixologist Julie Martin.
