Every Saturday lunchtime, chef Fanny Herpin, a protégée of Alain Ducasse and a fervent defender of sustainable fishing, at the helm in the kitchens since summer 2020, will celebrate forgotten fish (pout, mackerel, gurnard), in raw version, based on refined, light recipes.
